Haak Vineyards & Winery

Haak Vineyards & Winery Raymond and Gladys Haak were born and raised in South Texas . Raymond was born in Galveston, Texas and Gladys in Alvin, Texas . Raymond Haak is an Electrical Engineering graduate of the University of Houston . Gladys has extensive training and experience in Accounting and business management. They planted 3 acres of winegrapes and a few years later designed and built a modern, Mediterranean style facility which reflects the winery’s mission statement of offering “A Taste of the Old World in Galveston County ”. The winery consists of over 11,000 square feet, including an 1800 sq. ft. cellar, which is used for storing & aging wines in Oak Barrels.   Reserve Cabernet Sauvignon
This wine was made from Cabernet Sauvignon grapes. After crushing, the must was inoculated with cultured yeast and fermented on their skins for an extended period to maximize flavor and color extraction. After pressing, the wine was aged in new Oak for over 16 months to add aging potential and complex flavors from the toasted oak and tannin extracted from the barrels. This wine exhibits a full bodied mouthfeel with aromas of dark fruit like blackberries, Cherries and plums with a hint of toasted almonds and walnuts. This is a dry wine.
  Reserve Chardonnay
This wine is made from the same Chardonnay grapes used to make the 2002 Chardonnay wine previously described. The difference lies in the way the wine was processed. Once the juice was inoculated with cultured yeast, approximately half of the juice was racked from the stainless steel tank down to the cellar and into 225 liter (59 gallon) oak barrels to complete the fermentation. Near the end of primary fermentation, the wine was inoculated with secondary cultured yeast to complete a Malo-Lactic fermentation. This secondary fermentation converts Malic acid to Lactic acid. This conversion softens the mouthfeel and adds additional taste descriptors like butter, cream and walnuts to produce an elegant and balanced wine. This is a dry wine. Bottled 353 cases. Bronze Medal 2003 Texas Open Wine & Food Competition
