Chalk Hill Estate Vineyards & Winery
|
|
Chalk Hill is a ruggedly beautiful 1,200 acre estate. Surrounded by heritage oak woodlands and natural riparian streams, a scant 292 vineyard acres meander— a patchwork of 60 different small vineyards, each dedicated to producing distinctive wines of elegance and power. Here artisans of the vineyard and cellar collaborate to handcraft wines that reflect the vibrant and diverse character of the Chalk Hill Estate. Chalk Hill, the appellation, is one of twelve in Sonoma County—a region of fine wine, remarkable beauty and agricultural abundance. Unique biospheres distinguish Chalk Hill from the neighboring appellations—the cooler Russian River Valley to the west and the warmer Alexander Valley to the northeast. Elevations at Chalk Hill are higher; soil fertility is lower. In amazing proximity, the soils range from shallow to deep, from thin to thick, from gravel and rock to heavy clay. An old river bed caps one hill; an unusual serpentine vein ranges through another. And under the topsoil is a distinctive layer of chalk-colored volcanic ash which inspired the name of Chalk Hill, the appellation and the estate.

1996 Library Release -Chalk Hill Estate Bottled Merlot
Accented with dollops of Cabernet Sauvignon and Malbec, the combination produces a complex wine with classic black cherry, currant, and cassis flavors, ripe tannins and a supple finish. All the lots were produced in traditional fashion: native yeast fermentations, ageing in French oak, malolactic in barrel, no acidification, quarterly rackings, and egg white fining. The wine was bottled without filtration in July 1998.

Chalk Hill Estate Bottled Cabernet Sauvignon
The wine was aged for twenty months in predominantly new French oak. The final blend incorporated small amounts of the other Bordeaux varieties, including Petit Verdot, Malbec, Cabernet Franc and Merlot. These additions, all from our newest plantings of clones, fleshed out the structure and character of the blend and eliminated any need for fining. This wine is replete with aromas of ripe raspberry and blackberry, tinged with cigar box spice and dried flowers. The flavors add notes of black cherry syrup and blood orange to the mix, accentuating delicious contributions from toasty oak. The wine has substantial weight and grip, with silky tannins providing mid-palate sweetness and a lengthy finish.

Chalk Hill Estate Bottled Cabernet Sauvignon
Chalk Hill`s Estate Bottled Carbernet Sauvignon speaks clearly of the highly acclaimed 2001 vintage and continues the unmistakable quality and stylistic thread that has been evident in our previous vintages. Our rigorous viticultural standards includes strict adherence to low yields, leaf pulling to promote maturity and color, and multiple passes through the vineyard to harvest only those clusters at maximum ripeness. This commitment to quality winegrowing is applied to all our family-owned vineyards. The long stretch of dry, warm, autumn weather allowed for additional hang time, allowing the slow progression toward full maturity, richness, weight, and flavor concentration. The entire vintage was allowed to progress in small tanks though a native yeast fermentation with a cap management regime that extracted layers of flavors, concentrated texture and nuance that found its way to barrel... and ultimately to the bottle and glass. Aged in 65% new French oak for 21 months, and blended with additional Bordeaux varietals that frame and enhance the Cabernet, the wine boasts perfumed aromas of black currants, blackberry jam, with hints of lavender, mocha and star anise. The rich and expansive testure, bolstered by the ripe, velvety tannins, creates a lush mouthfeel and indicates cellar worthiness.

Chalk Hill Estate Vineyard Selection Adele’s Merlot
Adele`s Vineyard is gently sloped in a bowl directly opposite the winery, with vertically trellised vines all budded to UCD Clone 01 Merlot. The soil in this four-acre block varies, with sections containing clay-loam mixtures of various sorts surrounding a knoll composed entirely of sandstone.
The fruit was crafted to maximize color, tannin and weight, producing a Merlot in the classic style of "right bank" Bordeaux. The winemaker selected the finest eighteen barrels of the lot and designated them an Estate Vineyard Selection.
The wine`s bouquet features ripe plum, earth, black cherry and violets highlighted by anise and spicy oak. The structure of the wine is built on soft, expansive tannins, and flavors of berries, chocolate and plums mesh in a cohesive, mouth-filling finish. The wine`s intensity can best be appreciated by adventurous food pairings. Try Lavender and Pepper Crusted Ahi Tuna with Blue Potato Puree or the heartier Lamb Schnitzel with Porcini Spaetzle to gain a true appreciation of the depth of the 1998 Adele`s Vineyard Merlot.

Chalk Hill Estate Vineyard Selection Botrytised Semillon
Semillon was planted on the Chalk Hill Estate in 1981, primarily to blend with Sauvignon blanc. The site, however, was chosen to take advantage of Semillon`s susceptibility to botrytis, or "noble rot". This block is planted to 80% Semillon and 20% Sauvignon blanc, as in Sauternes, and lies at the bottom of a north-facing slope, sheltered by the hills to the east and west. There is little morning or afternoon sun, and moisture burns off slowly late in the season. After the grapes are fully ripe, light rainfall encourages botrytis development. When this is followed by a period of warm, dry weather the fruit is dessicated, concentrating the acid and sugar. This rare combination of events occurred in 1997, and a small lot of Semillon and Sauvignon blanc was finally harvested in late October at nearly 40° Brix.

Chalk Hill Estate Vineyard Selection Pinot Gris
The 2000 vintage marked the third in a series of cool vintages, quite optimal for this Pinot variety. The vineyard for this wine is planted to two Alsace clones: clone 146 is more aromatic and more delicate in structure than clone 152, which features full-bodied textures and heightened flavor complexity. The winemaking techniques promote balance and elegance along with power and structure. Whole cluster pressing protects the delicate Pinot Gris flavors while also minimizing color extraction from the fully ripe, bronzed fruit. The juice ferments in neutral oak to maximize the richness of barrel fermentation character while minimizing any wood intrusion into the natural nuttiness inherent in Pinot Gris varietal character. Ageing sur lies with biweekly stirring develops the ultimate structure of the wine, providing Chalk Hill with a robust, balanced and elegant Pinot Gris worthy of both ageing and exotic food pairings. Features aromas of citrus, red apple and jasmine accented with white pepper and hazelnut, and the broad mid-palate and vibrant finish add notes of pear, quince and ginger, making for a highly complex and multi-layered wine.
