The wine is crisp and clean with bright grapefruit notes balanced by tropical fruit and a hint of herbaceousness. This Dancing Bull Sauvignon Blanc was made using grapes from the best coastal regions in California, primarily from California's Monterey and Lake Counties. The grapes were gently whole-cluster pressed to maximize the fruit's varietal characteristics and citrus flavors. The juice was cold settled in order to give the finished wine elegance and balance. The wine was both filtered and fined prior to bottling.
