Understanding how great wine is made will increase your ability to taste and enjoy the world’s most celebrated beverage. As harvest approaches, our winemaker watches the progress of the grapes in our vineyards very carefully; measuring sugar and acid in the grapes using special lab equipment. Although lab work is important, it is similarly important that both the winemaker and the vineyard manager work to identify the perfect flavor of ripe wine grapes. Then on that all-important day, usually to the amazement of everyone involved, the grapes are harvested. Our grapes are all hand harvested and arrive at the winery cool and whole. Hot temperatures and broken skins in the picking bins can result in volatile acid in the wine, causing the wine to taste of acetic acid and have an unpleasant smell on the nose. Once the grapes are at the winery, they are either pressed for their juice (for white wine or Rose’) or destemmed and crushed and put into tanks or bins so that the juice can stay in contact with the skins to soak up the red color. The juice (or ‘must’ if it has skins still in it) is then ‘inoculated’ with yeast and the yeast metabolizes the sugar to produce alcohol and carbon dioxide. Red wines have to be stirred during fermentation, which is often called ‘punching down’ or ‘pumping over’. During fermentation carbon dioxide causes the skins to rise to the top requiring the production crew to punch this cap into the wine for greater extraction of color and flavor. The juice becomes dry wine after the yeast has consumed all the sugar. The wines are allowed to age slowly either in the stainless steel tanks, or in barrels. This process can take from six months to three years. Our winemaker uses primarily French and Hungarian barrels, which give the wines their unique and distinct taste. The wines are then moved to tanks for final blending just before bottling. Wine bottles are sterilized and filled with carbon dioxide before filling, to assure that no oxygen is present, which might damage the wine over time. Bottling and labeling is performed on the premises three to four times a year to produce 6500 cases annually.

Chateau Duplantier

We continue to explore the possibilities of this floral, delicate grape. Having found a favorable microclimate for its enchanting ways in our vineyard, this Viognier possesses true varietal character. Look for hints of grapefruit, honeydew melon and green apple.

We hand-selected this lot for cellar club members who favor sensual, definitive full-bodied red wines. Aside from an array of bright forward furit flavors, there is a formidable undercurrent of mocha and new leather that runs through this sultry red.

Nebbiolo
This light-bodied red is not intended for cellaring. Named for the for (nebbia in Italian) that drifts over Piedmont, Nebbiolo is suggestive of mocha, licorice and truffles. A perfect red wine for lighter fare.
