2003 - Pontchartrain Cuvée
Viognier (94.6%) Blanc Du Bois 5.4% Released November 27, 2004. Our traditional “Creole” white wine, produced in a rich, full bodied, complex style, based primarily on the Viognier grape with a touch of Blanc Du Bois added. Think Galatoire’s (Creole French) cuisine when contemplating this wine. Extensive lees contact and barrel fermentation and aging in American oak of approximately 1/2 of the cuvée are key elements in the style presented here. A graceful, elegant, yet powerful wine that easily stands alone but is also ready to take on really rich food. Tasting notes: Appearance: Light yellow gold color. Aroma: Tropical fruit, perfume-like floral mixed with layers of vanilla, caramel and wood and hints of pear and peach. Taste: Rich, mouth filling tastes that were anticipated by and in harmony with the aromas. There is a decidedly feminine aspect to this wine which is marked by extremely fine textures. The wine has excellent overall balance and a medium long finish.

Varietal Definition
Viognier:
The most acclaimed white wine grape from France's Rhône Valley, Viognier is a highly aromatic varietal, with a flavor profile that could include peach, apricot, nectarine, lichee, musk and flower blossom. The heady perfume of this varietal is one of its trademarks, although its flavors are sometimes problematic in matching with food. However, it does well with lobster, crab and moderately flavored fish. Use it as an apéritif as an alternative to Chardonnay. The "Rhône Rangers" in California have done an excellent job promoting this varietal.

Blanc du Bois:
Developed at the University of Florida for use in that state, this white wine-producing grape with a flavor similar to Muscat has had medal-winning success for somewhat Riesling-like varietal still wine and blends of sparkling wine. Developed by John Mortenson of the Leesburg Research Station, it is the result of a cross between a Florida-developed hybrid (thought by some to be a V. aestivalis complex derivative) and the Cardinal table grape. Fertile, productive and hearty, it ripens in early July in Florida. A coldy hardy varietal,it is also resistant to Pierce's disease, but appears particularly vulnerable to Anthracnose and Black Rot.
